The choice of fish often depends on the day's catch, so in traditional restaurants the menu is adapted to what the sea gave to the fishermen that day. Regardless of the method of preparation, fresh fish is almost always served with simple side dishes. Swiss chard with potatoes, grilled vegetables, homemade bread or a light seasonal salad complete the meal without taking away the attention from the main ingredient. This balance of flavors is one of the most important features of Mediterranean cuisine. Fish on the coast has always been much more than everyday food. It represented the fruit of the sea, the result of the work of fishermen and part of the tradition that was passed down through families. This is why communal lunches after a successful catch were an important part of life in coastal towns, and recipes were kept as carefully as fishing skills.
