Njeguški prosciutto – a taste of tradition that matures between the mountains and the sea

Few products represent Montenegro as recognizable as Njeguški prosciutto. Its smell, rich aroma and method of preparation have made it one of the symbols of Montenegrin gastronomy for generations. For many travelers, the first encounter with local cuisine begins with thinly sliced slices of prosciutto, served with homemade cheese, olives and freshly baked bread.

The story of Njeguški prosciutto begins in the village of Njeguši, located on the slopes of Mount Lovćen, between the mountain air and the proximity of the Adriatic Sea. It was in this unique natural environment that the skill of drying meat was developed over the centuries and is still passed down from generation to generation. Locals often say that anyone can learn the same recipe, but that the natural conditions of Njeguš cannot be moved to another place. The preparation of prosciutto begins with the careful selection of a quality pork leg. After salting, there is a period of rest, and then smoking with mild smoke from carefully selected wood. After that comes the most important part of the process – long natural maturation. During the following months, the meat slowly loses moisture, develops a characteristic aroma and acquires a recognizable texture for which Njeguški prosciutto is known throughout the region. Time is one of its most important ingredients. While modern manufacturing often strives for speed, traditional manufacturers know that quality cannot be created overnight. Each stage requires attention, experience and patience, because it is precisely the long maturation process that gives prosciutto its full taste and smell. On the Montenegrin table, Njeguški prosciutto is most often served as an appetizer. Traditionally, it is combined with Njeguš cheese, local olives and warm bread baked under the stove. This combination of simple foods shows that top quality often does not require complex preparation - it is enough for each food to retain its natural character. Although it is most famous in Njeguši, today prosciutto can be found all over Montenegro. Almost every restaurant that nurtures traditional cuisine includes it in its offer, and many visitors choose it as a gastronomic souvenir to take home. Its distinctive aroma has become part of the country's identity and one of the tastes that tourists most often associate with traveling through Montenegro. A visit to Njeguši offers an opportunity to get to know the entire production process, from the rooms where prosciutto is dried to the family stories passed down through the generations. Many producers still work in the same way as their ancestors, believing that quality is not achieved by industrial production but by experience, natural conditions and respect for tradition. Njeguški prosciutto is not only a food product. It represents a combination of nature, craftsmanship and cultural heritage that shaped life on the slopes of Lovcen. Each carefully cut slice tells the story of the people who perfected this skill through the generations and preserved one of the most recognizable symbols of Montenegrin gastronomy.
